"The old man used to tell me that the sea was where you should go when you have somewhere else to be, as a reminder to yourself to never allow the demands of life to become your life. For him, a day by the sea was a reminder that the world wouldn't stop turning if he said "no" to life's pesky "obligations" that he desperately didn't want to attend, but felt he must. In this way, the sea taught him how to say "no". This was his meditation, for as long as I can remember, a meditation made obvious by his appearance. The old man had a mouthful of surprisingly white teeth that contrasted well against skin drawn dark from many afternoons spent basking in the sun; and his face was festooned with deep lines, artifacts, of many days smiling, joking and living well. When this smiling face was missing from a place where it was expected, after some searching, I'd eventually find him nestled in his favorite spot by the sea, watching the sun setting with his blackened feet lazily buried beneath cool, wet sand; sipping from a bottle of Albariño in his leathery hands, the sand-colored wine disappearing slowly and then all at once, with the rising of the tide."

When in Rome, do as the Romans do. The Albariño grape has been cultivated since the days of the ancient Romans. Though, we'd argue it has gotten better with age. The Romans would blend the Albariño grape with other more sought after grapes at the time, not realizing it was worthy of standing entirely alone. It is living, breathing, flowing history that you can taste with each pour. Lemon glaze, apple, pear and nectarine slices intertwine for a translucent gold that tastes as good as it looks. Serve it chilled if you so choose and pair it alongside the sea: seared, buttery scallops, flaky white fish, shrimp, lobster and sushi.
